Onions, cut in large wedges
Instructions
- Preheat the oven to 300 degrees F.
- Chop the onions and place them in a large dutch oven.
- Sprinkle salt on all sides of the pork.
- Rub the pork with the spice rub and place it in the dutch oven, fat side down.
- Pour the soda into the pot without pouring it over the meat.
- Stir in the brown sugar.
- Spoon the chipotle adobo sauce and peppers on top of the pork.
- Pour 1 cup of BBQ sauce over the pork.
- Cover the dutch oven and place it in the oven.
- Cook for 6 to 8 hours, flipping the pork halfway through.
- Once done, remove the pork and shred it using two forks.
- Skim the fat from the liquid in the dutch oven.
- Blend the remaining liquid with an immersion blender.
- Return the shredded pork to the blended liquid and mix well.
- Add remaining BBQ sauce to the meat or serve it on the side.
