Easy Oven Cooked Pulled Pork

Ingredients

Dry Rub

  • 2 tablespoon brown sugar
  • 1 tablespoon chili powder
  • 1 teaspoon sea salt
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon dry mustard
  • ½ teaspoon oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder

Pulled Pork

  • 4 lbs boneless pork shoulder
  • 2 tablespoon olive oil
  • 1 cup beer or substitute (Dr. Pepper, Root Beer, or Coke)
  • 1 medium onion, diced

Instructions

  1. Mix all the dry rub ingredients in a small bowl until well blended.
  2. Pat the pork roast dry and coat it with the dry rub.
  3. Wrap the pork in plastic wrap and refrigerate for 12 to 24 hours.
  4. Preheat the oven to 300°F.
  5. In a large pot, heat the olive oil and sauté the diced onions for 2-3 minutes.
  6. Sear the pork in the pot on all sides for 3-5 minutes each side.
  7. Remove from heat and add the beer to the pot.
  8. Cover the pot and cook in the oven for 2 to 3 hours, checking at the 90-minute mark for liquid levels.
  9. When the pork reaches an internal temperature of 190°F to 195°F, remove it from the oven.
  10. Let it cool slightly, then shred the pork with two forks and mix with barbecue sauce if desired.
