Easy Oven Cooked Pulled Pork

Pulled Pork

beer or substitute (Dr. Pepper, Root Beer, or Coke)

Instructions
- Mix all the dry rub ingredients in a small bowl until well blended.
- Pat the pork roast dry and coat it with the dry rub.
- Wrap the pork in plastic wrap and refrigerate for 12 to 24 hours.
- Preheat the oven to 300°F.
- In a large pot, heat the olive oil and sauté the diced onions for 2-3 minutes.
- Sear the pork in the pot on all sides for 3-5 minutes each side.
- Remove from heat and add the beer to the pot.
- Cover the pot and cook in the oven for 2 to 3 hours, checking at the 90-minute mark for liquid levels.
- When the pork reaches an internal temperature of 190°F to 195°F, remove it from the oven.
- Let it cool slightly, then shred the pork with two forks and mix with barbecue sauce if desired.
