Instructions
- Remove the stems and pit the cherries.
- In a medium pot, combine the pitted cherries, sugar, and water.
- Bring the mixture to a boil over medium-high heat, stirring to dissolve the sugar.
- Once boiling, reduce the heat to medium-low and simmer for 5 minutes.
- Remove from heat and mash the cherries with a potato masher.
- Let the mixture steep for 20-25 minutes.
- Strain the mixture to collect the cherry syrup in a jar, saving the solids.
- Cool the syrup and store it in the fridge for up to 4 weeks.
- To serve, mix ΒΌ cup of cherry syrup with 1 cup of sparkling water in a glass.
- Garnish with fresh cherries and basil if desired.
