Ingredients

The base

  • 4 cups fresh cherries, stems removed and pitted
  • 2 cups white sugar
  • 2 cups water

For serving

  • 1 cup sparkling water
  • extra cherries for garnish
  • extra fresh basil for garnish

Instructions

  1. Remove the stems and pit the cherries.
  2. In a medium pot, combine the pitted cherries, sugar, and water.
  3. Bring the mixture to a boil over medium-high heat, stirring to dissolve the sugar.
  4. Once boiling, reduce the heat to medium-low and simmer for 5 minutes.
  5. Remove from heat and mash the cherries with a potato masher.
  6. Let the mixture steep for 20-25 minutes.
  7. Strain the mixture to collect the cherry syrup in a jar, saving the solids.
  8. Cool the syrup and store it in the fridge for up to 4 weeks.
  9. To serve, mix ΒΌ cup of cherry syrup with 1 cup of sparkling water in a glass.
  10. Garnish with fresh cherries and basil if desired.
