Ingredients

The cherries

  • 1 pound sweet bing cherries, pitted and stems removed

The syrup

  • ½ cup water
  • ½ cup honey (or your desired sweetener)
  • 1 teaspoon vanilla extract
  • 1 pinch nutmeg
  • 1 stick cinnamon
  • 1 strip orange peel
  • 1 cup bourbon (or any favorite whiskey)

Instructions

  1. Place the pitted cherries in two clean pint-sized mason jars or one large quart-sized mason jar.
  2. In a medium saucepan, combine water, honey, vanilla extract, and stir until combined.
  3. Add the cinnamon stick and orange peel, then heat the mixture until it reaches a simmer.
  4. Reduce the heat and simmer for about 10 minutes to meld the flavors.
  5. Remove from heat, strain out the cinnamon stick and orange peel, and slowly stir in the bourbon.
  6. Pour the bourbon mixture over the cherries, let it cool to room temperature, then secure the lids on the jars.
  7. Refrigerate for at least 3 days before using. The cherries can last for 2-3 months in the fridge.
