Chocolate Covered Cherries

The cherries

agave nectar or honey

arrowroot powder

The chocolate
Instructions
- Heat cherries, agave, vanilla, and almond extract in a medium saucepan until simmering.
- In a small bowl, combine arrowroot and water to form a paste.
- Stir the arrowroot paste into the cherry mixture and cook for about 1 minute until thickened.
- Remove the cherry mixture from heat and set aside.
- Melt chocolate in a small saucepan over very low heat.
- Spoon about 1 teaspoon of melted chocolate into each candy mold.
- Add one cherry with some sauce on top of the chocolate in the mold.
- Cover with another teaspoon of melted chocolate.
- Refrigerate to set for about 20-30 minutes.
- Remove from refrigerator and pop the candies out of the molds.
