Chocolate Covered Cherries

Ingredients

The cherries

  • 1 package frozen cherries (10 ounces)
  • ½ cup agave nectar or honey
  • 1 tablespoon vanilla extract
  • teaspoon almond extract
  • 1 tablespoon arrowroot powder
  • 1 tablespoon water

The chocolate

  • 1 cup chocolate chips

Instructions

  1. Heat cherries, agave, vanilla, and almond extract in a medium saucepan until simmering.
  2. In a small bowl, combine arrowroot and water to form a paste.
  3. Stir the arrowroot paste into the cherry mixture and cook for about 1 minute until thickened.
  4. Remove the cherry mixture from heat and set aside.
  5. Melt chocolate in a small saucepan over very low heat.
  6. Spoon about 1 teaspoon of melted chocolate into each candy mold.
  7. Add one cherry with some sauce on top of the chocolate in the mold.
  8. Cover with another teaspoon of melted chocolate.
  9. Refrigerate to set for about 20-30 minutes.
  10. Remove from refrigerator and pop the candies out of the molds.
