Ingredients

The rice

  • 1 cup short grain brown rice
  • cups water
  • ¾ tsp kosher salt

The dressing

  • 1 tbsp soy sauce
  • 2 tsp sesame oil
  • 1 tsp mirin
  • 3 pieces scallions, finely sliced

Instructions

  1. 1. Place all ingredients for the rice into the inner pot of the Instant Pot.
  2. 2. Secure the lid and turn the valve to sealing. Set the Instant Pot to manual, high pressure for 22 minutes.
  3. 3. Once cooking is complete, allow the pressure to release naturally.
  4. 4. Remove the lid and add the dressing ingredients. Toss to combine and adjust seasoning as needed.
