Ingredients

The tacos

  • 12 pieces Flour Tortillas
  • 2 pounds boneless skinless chicken breasts
  • 2 tablespoons Cajun seasoning or taco seasoning

The toppings

  • 2 cups diced tomatoes
  • 4 cups shredded romaine or lettuce
  • 2 cups Mexican cheese blend or cheddar
  • 2 pieces jalapeños, seeded and sliced
  • 1 ½ cups sour cream
  • 1 ½ cups guacamole
  • 1 cup salsa
  • 2 tablespoons cilantro, finely chopped
  • 1 bunch scallions, sliced
  • 1 piece lime, cut into wedges

Instructions

  1. Prep all ingredients and set up bowls with toppings.
  2. Cut chicken breasts into strips and toss with seasoning.
  3. Heat olive oil in a pan and add seasoned chicken strips, cooking until golden brown.
  4. Flip chicken and cook until done, then remove from pan and let rest.
  5. Cut chicken into small pieces after resting.
  6. Add a little water to the pan to create a sauce with the drippings.
  7. Toast tortillas in a hot skillet until they develop brown spots and puff up.
  8. Keep tortillas warm in a moist towel until ready to serve.
  9. Return chicken to the pan to coat with sauce before serving.
  10. Serve immediately with tortillas and toppings.
