Ingredients

The filling

  • 1 tablespoon sesame oil plus additional for spraying or brushing
  • 1 pound white mushrooms, diced
  • 3 pieces green onions, thinly sliced (reserve 1 tablespoon for sauce)
  • 1 clove garlic, minced
  • 1 teaspoon minced ginger
  • 1 tablespoon tamari or soy sauce
  • 1 tablespoon mirin
  • teaspoon white pepper (optional)
  • 25 pieces wonton wrappers

The dipping sauce

  • 2 tablespoons tamari or soy sauce
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon thinly sliced green onions
  • 1 clove garlic, minced
  • 1 teaspoon honey or agave syrup
  • 1 teaspoon sesame seeds

Instructions

  1. Heat sesame oil in a skillet and cook mushrooms, green onions, garlic, and ginger until mushrooms release juices and liquid evaporates.
  2. Stir in tamari, mirin, and white pepper, cooking until sauce thickens.
  3. Preheat oven to 400°F and prepare a baking sheet with oil or parchment.
  4. Fill wonton wrappers with mushroom filling, seal with water, and place on the baking sheet.
  5. Spray or brush tops of wontons with oil and bake until browned and crisp, about 8-10 minutes.
  6. While baking, whisk together all dipping sauce ingredients and serve with wontons.
