Instructions
- Preheat the smoker to 225 degrees.
- In a bowl, combine the shredded cheeses with cornstarch and set aside.
- Heat a skillet over medium-high heat and melt the butter.
- Add the onions and garlic, cooking until translucent and fragrant.
- Lower the heat to medium and add the remaining ingredients, stirring until the cheese melts.
- Taste and adjust seasoning with salt and pepper as needed.
- Thicken the dip for about 10 minutes, then transfer to the smoker.
- Smoke for 2-3 hours, adjusting to taste for desired smokiness.
