Ingredients

The cheese mixture

  • cups shredded cheddar cheese
  • 1 cup shredded pepper jack cheese
  • 1 tablespoon cornstarch
  • ½ tablespoon unsalted butter

The vegetables and spices

  • cup finely chopped onion
  • 2-3 cloves garlic, minced
  • 15.5 oz fire roasted tomatoes
  • 4 oz green chilies
  • ¼ cup finely chopped cilantro
  • ½ teaspoon cumin
  • ¼ teaspoon chili powder
  • to taste salt and pepper

The liquids

  • cups milk
  • ½ cup half and half

Instructions

  1. Preheat the smoker to 225 degrees.
  2. In a bowl, combine the shredded cheeses with cornstarch and set aside.
  3. Heat a skillet over medium-high heat and melt the butter.
  4. Add the onions and garlic, cooking until translucent and fragrant.
  5. Lower the heat to medium and add the remaining ingredients, stirring until the cheese melts.
  6. Taste and adjust seasoning with salt and pepper as needed.
  7. Thicken the dip for about 10 minutes, then transfer to the smoker.
  8. Smoke for 2-3 hours, adjusting to taste for desired smokiness.
