30 Minute Shrimp Tacos with Pineapple Salsa

Ingredients

The shrimp tacos

  • 1 lb shrimp (ideally large), peeled and deveined
  • 2 tbsp extra virgin olive oil, divided
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp mild chili powder
  • ¼ tsp crushed red pepper flakes
  • ½ tsp fine sea salt
  • 8 pieces corn tortillas
  • to taste optional garnishes: avocado, lime wedges, cilantro, jalapeño slices

The jalapeño lime crema

  • ½ cup raw cashews
  • 1 small jalapeño, de-seeded and de-veined
  • ½ tsp garlic powder
  • ½ juice of lime
  • ¼ cup water
  • ½ tsp fine sea salt

Instructions

  1. Soak cashews in hot water to soften.
  2. Pat shrimp dry and mix with olive oil, spices, salt, and pepper; let marinate.
  3. Prepare the salsa by mixing pineapple, onion, cilantro, lime zest, lime juice, and salt.
  4. Blend drained cashews with jalapeño, garlic powder, lime juice, water, and salt until smooth.
  5. Cook shrimp in a skillet with olive oil for about 4 minutes until browned.
  6. Warm tortillas and assemble tacos with crema, shrimp, and salsa; garnish as desired.
