Ingredients

The shrimp

  • 2 teaspoons olive oil
  • 1 1/4 pounds shrimp, peeled, deveined and tails removed
  • to taste chili powder
  • to taste salt

The mango salsa

  • 1 cup mango, finely diced
  • ½ cup red bell pepper, finely diced
  • ½ jalapeno pepper minced (remove seeds and ribs to make it milder)
  • 1 lime juice
  • ½ cup cilantro leaves, finely chopped

The creamy cilantro lime sauce

  • 1 cup sour cream (can use light)
  • ½ cup cilantro leaves, roughly chopped
  • 2 teaspoons lime juice
  • 1 ½ teaspoons honey
  • ¼ cup prepared green salsa
  • to taste salt and pepper

For assembly

  • 1 cup shredded purple cabbage
  • 8 pieces corn or flour tortillas

Instructions

  1. Heat olive oil in a large pan over high heat.
  2. Season shrimp with chili powder and salt, then sear in the pan for 2-3 minutes per side until cooked through.
  3. Combine mango salsa ingredients in a bowl and add salt to taste; refrigerate for at least 15 minutes.
  4. In a food processor, blend all creamy cilantro sauce ingredients until smooth; add salt and pepper to taste.
  5. Warm the tortillas, then assemble tacos with sauce, cabbage, shrimp, and mango salsa.
