Ingredients

The shrimp

  • 1 lb. large shrimp, peeled & deveined
  • ½ teaspoon cumin
  • ½ teaspoon smoked paprika
  • ¼ teaspoon ancho chili powder
  • ¼ teaspoon garlic powder
  • teaspoon sea salt

The tacos

  • 1 each red pepper, julienned
  • 1 each yellow pepper, julienned
  • 1 tablespoon olive oil
  • to taste salt
  • 10–12 leaves butter lettuce

The mango avocado salsa

  • ¾ cup diced mango
  • 3 each avocados, diced
  • ¼ cup diced red onion
  • ¼ cup chopped fresh cilantro
  • tablespoons diced jalapeno
  • 1 tablespoon red wine vinegar
  • 1 each lime, juiced
  • to taste salt

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine diced mango, avocado, red onion, cilantro, jalapeno, red wine vinegar, lime juice, and salt. Mix gently and set aside.
  3. In another bowl, mix cumin, smoked paprika, ancho chili powder, garlic powder, and salt.
  4. Season the shrimp with the spice blend and set aside.
  5. Toss the julienned peppers with olive oil and salt.
  6. Spray the grill pan with cooking spray and add the peppers. Grill for 4-5 minutes until slightly charred, then transfer to a bowl.
  7. Grill the seasoned shrimp for 2-3 minutes per side until pink and slightly charred, then mix with the peppers.
  8. Serve the shrimp and peppers on butter lettuce cups and top with the mango avocado salsa.
