Grilled Shrimp Tacos with Mango Avocado Salsa

The mango avocado salsa

Instructions
- Preheat the grill to medium-high heat.
- In a bowl, combine diced mango, avocado, red onion, cilantro, jalapeno, red wine vinegar, lime juice, and salt. Mix gently and set aside.
- In another bowl, mix cumin, smoked paprika, ancho chili powder, garlic powder, and salt.
- Season the shrimp with the spice blend and set aside.
- Toss the julienned peppers with olive oil and salt.
- Spray the grill pan with cooking spray and add the peppers. Grill for 4-5 minutes until slightly charred, then transfer to a bowl.
- Grill the seasoned shrimp for 2-3 minutes per side until pink and slightly charred, then mix with the peppers.
- Serve the shrimp and peppers on butter lettuce cups and top with the mango avocado salsa.
