Instructions
- Make the mango salsa by combining mango, red onion, lime zest, lime juice, cilantro, and salt in a bowl; mix and set aside.
- Prepare the chorizo beans by heating a small saucepan to medium-high heat, cooking the chorizo until browned, draining excess fat, adding black beans and mango juice, then simmering for 10-15 minutes.
- Cook the shrimp by heating a grill or skillet to medium heat, brushing shrimp with oil, coating with chili powder, smoked paprika, salt, and cayenne pepper, then cooking until opaque and tails are curled.
- Assemble the tacos by whisking together yogurt and lime juice, then scooping chorizo beans into each tortilla, adding shrimp, topping with cheese, mango salsa, and lime yogurt.
