Chipotle Lime Skirt Steak Fajitas

Ingredients

Marinade

  • 2 limes juice
  • 2 limes zest
  • cup olive oil
  • 1 chipotle pepper in adobo sauce
  • 1 tsp adobo sauce
  • 1 large bunch cilantro
  • 2 cloves garlic
  • 1 tsp salt

Fajitas

  • 1.5–2 lbs skirt steak
  • 1 large onion
  • 2 large bell peppers
  • 8 tortillas flour

Toppings

  • 1 avocado optional
  • 1 package queso fresco
  • 2 limes sliced
  • 1 large tomato
  • ½ cup sour cream
  • 1 cup chopped cilantro
  • 1 jalapeno optional

Instructions

  1. Combine all marinade ingredients in a blender or food processor.
  2. Marinate the skirt steak for at least 1 hour and up to 5 hours.
  3. Preheat the grill to medium direct heat (350-400 degrees).
  4. Sauté onion and peppers in a cast iron skillet on the grill.
  5. Grill the skirt steak for 4 minutes on each side until charred, aiming for an internal temperature of 125 degrees.
  6. Tent the meat in foil for 5 minutes after grilling.
  7. Slice the skirt steak against the grain and serve with tortillas and toppings.
