Instructions
- Combine all marinade ingredients in a blender or food processor.
- Marinate the skirt steak for at least 1 hour and up to 5 hours.
- Preheat the grill to medium direct heat (350-400 degrees).
- Sauté onion and peppers in a cast iron skillet on the grill.
- Grill the skirt steak for 4 minutes on each side until charred, aiming for an internal temperature of 125 degrees.
- Tent the meat in foil for 5 minutes after grilling.
- Slice the skirt steak against the grain and serve with tortillas and toppings.
