Ingredients

The salad

  • 3 cups broccoli, cut into bite sized pieces
  • ½ cup dried cranberries
  • ½ cup plant-based bacon
  • ¼ cup finely chopped red onion
  • ¼ cup slivered almonds
  • ¼ cup chopped apples

The dressing

  • ½ cup raw cashews
  • 2 tablespoons cooked potato
  • ¼ cup cooked white beans, rinsed and drained
  • 6 tablespoons water
  • 1 ½ teaspoons distilled white vinegar
  • 1 teaspoon lemon juice
  • ¾ teaspoon sea salt
  • teaspoon ground mustard seed

Instructions

  1. Blend all dressing ingredients until smooth and creamy.
  2. Combine all salad ingredients in a large bowl.
  3. Add about ½ cup of dressing to the salad and mix well.
  4. Taste and adjust the dressing as needed.
  5. Chill the salad before serving.
