Ingredients

Herby Creamy Hemp Dressing

  • 1 cup hemp seeds (or ½ cup cashews)
  • ½ cup water
  • 2 tablespoons olive oil
  • 4 tablespoons lemon juice (from 2 lemons)
  • 2 tablespoons apple cider vinegar (or other pale vinegar)
  • 4 cloves garlic
  • 1 teaspoon salt
  • 2 tablespoons nutritional yeast (optional)
  • ½ cup fresh flat-leaf parsley (or dill, basil, or a combo)

Broccoli Salad

  • 8 ounces chopped broccoli
  • 1 cup shredded purple cabbage
  • ¼ cup finely sliced or diced red onion
  • ½ cup sliced and quartered radishes
  • 1 cup sliced (or matchstick) salad turnips (or Turkish cucumber)

Garnishes

  • to taste sunflower seeds or hemp seeds
  • to taste avocado
  • to taste sprouts
  • to taste fresh Italian parsley leaves

Instructions

  1. Make the dressing by blending all dressing ingredients (except parsley) until smooth, then add parsley and blend until chopped.
  2. Chop the broccoli finely to yield about 4 cups and place in a large bowl with cabbage, radishes, onion, and turnips.
  3. Add most of the dressing to the salad, seasoning with salt and pepper to taste.
  4. Before serving, sprinkle with seeds, add sprouts, parsley, and avocado if desired.
