Creamy Vegan Broccoli Salad

Broccoli Salad

chopped broccoli

shredded purple cabbage

finely sliced or diced red onion

sliced and quartered radishes

sliced (or matchstick) salad turnips (or Turkish cucumber)

Instructions
- Make the dressing by blending all dressing ingredients (except parsley) until smooth, then add parsley and blend until chopped.
- Chop the broccoli finely to yield about 4 cups and place in a large bowl with cabbage, radishes, onion, and turnips.
- Add most of the dressing to the salad, seasoning with salt and pepper to taste.
- Before serving, sprinkle with seeds, add sprouts, parsley, and avocado if desired.
