Vegan Broccoli Salad

Salad

broccoli crowns (florets only), finely chopped

red grapes, halved

roasted salted almonds, finely chopped

diced red onion

dried cranberries or raisins
Instructions
- Soak the cashews in water for 2 hours or overnight, or in hot water for 10 minutes if using a high-speed blender.
- Drain the cashews and blend them with the other dressing ingredients until smooth and creamy.
- In a mixing bowl, combine the broccoli, grapes, almonds, red onion, and dried cranberries.
- Add the dressing to the salad and toss to coat thoroughly. Season with salt and pepper to taste.
- Serve chilled.
