Instructions
- Beat the cream cheese until smooth.
- Add the confectioner's sugar and mix well.
- Incorporate the vanilla extract and mix again.
- Melt the chocolates over a double boiler and let cool slightly.
- Slowly add the melted chocolate to the cream cheese mixture and blend well.
- Whip the heavy cream until stiff peaks form, then gently fold it into the chocolate mixture.
- Refrigerate the cheesecake mixture while preparing the crust.
- Mix the Biscoff cookie crumbs, cocoa powder, and melted butter until combined.
- Press the crust mixture into a 10-inch springform pan.
- Spoon the chocolate cheesecake mixture into the pan and smooth the top.
- Garnish with raspberries and refrigerate for at least 8 hours.
