Ingredients

Crust

  • 7 oz Biscoff cookies (or graham crackers), crushed
  • 4 tablespoon unsweetened cocoa powder
  • ¼ cup butter, melted

Filling

  • 32 oz cream cheese, softened
  • ¾ cup confectioners sugar
  • teaspoon vanilla extract
  • oz bittersweet chocolate, chopped
  • oz semisweet chocolate, chopped
  • 8 oz heavy whipping cream
  • 6 oz raspberries, for garnish

Instructions

  1. Beat the cream cheese until smooth.
  2. Add the confectioner's sugar and mix well.
  3. Incorporate the vanilla extract and mix again.
  4. Melt the chocolates over a double boiler and let cool slightly.
  5. Slowly add the melted chocolate to the cream cheese mixture and blend well.
  6. Whip the heavy cream until stiff peaks form, then gently fold it into the chocolate mixture.
  7. Refrigerate the cheesecake mixture while preparing the crust.
  8. Mix the Biscoff cookie crumbs, cocoa powder, and melted butter until combined.
  9. Press the crust mixture into a 10-inch springform pan.
  10. Spoon the chocolate cheesecake mixture into the pan and smooth the top.
  11. Garnish with raspberries and refrigerate for at least 8 hours.
