Grilled Peach and Sweet Corn Summer Grain Bowls

Ingredients

Basil Vinaigrette

  • 1 cup fresh basil leaves
  • 1 tablespoon white wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • ¼ cup olive oil
  • ½ teaspoon coarse salt
  • ¼ teaspoon ground black pepper

Grain Bowls

  • 1 cup ancient grains, rice or beans
  • 2 medium peaches, sliced in half and pitted
  • 2 medium ears of corn, husked
  • 2 tablespoons olive oil, divided
  • 1 pound boneless skinless chicken breasts
  • ½ teaspoon coarse salt
  • ¼ teaspoon ground black pepper
  • 1 medium ripe avocado, peeled and diced
  • 1 cup sweet cherries, halved and pitted

Instructions

  1. Blend all dressing ingredients until smooth and refrigerate.
  2. Prepare grains according to package directions and chill.
  3. Preheat grill to medium heat and brush peaches and corn with olive oil.
  4. Season chicken with salt and pepper, grill corn and chicken for 10-15 minutes, turning corn frequently.
  5. Add peaches to grill during the last 5 minutes, cooking until grill marks appear.
  6. Let grilled items cool for 5-10 minutes, then dice peaches, slice corn, and chicken.
  7. Divide grains, grilled peaches, corn, chicken, avocado, and cherries into bowls.
  8. Drizzle with basil vinaigrette and serve immediately.
