Grilled Peach and Sweet Corn Summer Grain Bowls

Basil Vinaigrette

Grain Bowls

ancient grains, rice or beans

peaches, sliced in half and pitted

boneless skinless chicken breasts

ripe avocado, peeled and diced

sweet cherries, halved and pitted
Instructions
- Blend all dressing ingredients until smooth and refrigerate.
- Prepare grains according to package directions and chill.
- Preheat grill to medium heat and brush peaches and corn with olive oil.
- Season chicken with salt and pepper, grill corn and chicken for 10-15 minutes, turning corn frequently.
- Add peaches to grill during the last 5 minutes, cooking until grill marks appear.
- Let grilled items cool for 5-10 minutes, then dice peaches, slice corn, and chicken.
- Divide grains, grilled peaches, corn, chicken, avocado, and cherries into bowls.
- Drizzle with basil vinaigrette and serve immediately.
