Perfect Summer Salad
Ingredients
Salad Base

field greens or chopped romaine lettuce

peach, peeled and sliced

feta cheese crumbles

boneless skinless chicken breasts or thighs

corn, kernels cut off the ear

Roma tomatoes, sliced
Marinade and Dressing

extra virgin olive oil

balsamic vinegar

freshly ground black pepper
Instructions
- Marinate chicken thighs for 3-4 hours or overnight in olive oil and your choice of herbs and spices.
- Grill the marinated chicken thighs until cooked through, then set aside to cool and slice into strips.
- Grill the ear of corn until tender, then let cool and cut the kernels off the cob.
- Peel and slice the peach, and set aside.
- Slice the Roma tomatoes, mix with olive oil, sea salt, and chopped basil, and let marinate.
- On a large serving platter, arrange the field greens.
- Layer the chicken strips and other ingredients in a visually appealing manner.
- Serve with extra virgin olive oil, balsamic vinegar, sea salt, and black pepper or your favorite dressing.
