Grilled Stuffed Avocados with Tex-Mex Shredded Chicken and Black Beans

Ingredients

The avocados

  • 3 large Avocados

The filling

  • 2 tsp Avocado Oil
  • cup chopped Onion
  • ½ cup chopped Green Bell Pepper
  • ½ cup chopped Red Bell Pepper
  • 1 tbsp Taco Seasoning
  • cup Cherry Tomatoes
  • cup Frozen Corn
  • cups Shredded Chicken
  • ½ cup Black Beans
  • ¼ cup Salsa
  • cup Shredded Cheese
  • 1 tbsp finely chopped Cilantro
  • 1 tbsp fresh Lime Juice

Instructions

  1. Heat avocado oil in a pan over medium heat and sauté chopped peppers, onions, and taco seasoning for 5-6 minutes.
  2. Add tomatoes and corn, cooking for another 3-4 minutes.
  3. Mix in shredded chicken, black beans, salsa, cheese, and remaining taco seasoning, then reduce heat and stir in cilantro and lime juice.
  4. Cut avocados in half, remove the seed, and scoop out some flesh to create a well.
  5. Grill the avocado halves, flesh side down, for 4-5 minutes until charred.
  6. Fill grilled avocados with the chicken mixture and top with cheese and cilantro.
