Instructions
- Heat avocado oil in a pan over medium heat and sauté chopped peppers, onions, and taco seasoning for 5-6 minutes.
- Add tomatoes and corn, cooking for another 3-4 minutes.
- Mix in shredded chicken, black beans, salsa, cheese, and remaining taco seasoning, then reduce heat and stir in cilantro and lime juice.
- Cut avocados in half, remove the seed, and scoop out some flesh to create a well.
- Grill the avocado halves, flesh side down, for 4-5 minutes until charred.
- Fill grilled avocados with the chicken mixture and top with cheese and cilantro.
