Vietnamese Shrimp Lettuce Wraps

Ingredients

The wraps

  • 1 head Butter Lettuce
  • 1 large avocado, sliced (optional)
  • 12 large prawns, cooked, peeled with tails off
  • 3 cups shredded or sliced veggies (carrots, radishes, daikon, cabbage, cucumber, etc.)
  • ½ cup chopped mixed herbs (mint, basil, cilantro)
  • 2 scallions diced
  • to taste kosher salt

Nuoc Cham Dressing

  • 1 batch Nuoc Cham Dressing

Instructions

  1. Prepare the Nuoc Cham dressing by stirring sugar into lime juice and adding the remaining ingredients.
  2. Arrange the butter lettuce leaves on a platter.
  3. Distribute the prawns on each lettuce leaf.
  4. Add a slice of avocado and divide the shredded veggies among each leaf.
  5. Sprinkle with fresh herbs, scallions, and a light sprinkling of kosher salt.
  6. Serve immediately with the Nuoc Cham dressing.
