Instructions
- For the black bean pudding, rinse and drain the black beans, then blend with the other ingredients until smooth.
- For the cashew pudding, soak the cashews in boiling water for 1 hour, then rinse and drain before blending with the other ingredients until smooth.
- Taste the pudding and adjust sweetness if necessary by adding more maple syrup or dates.
- If using black beans, strain the mixture through a fine mesh strainer if you want a smoother texture.
- Scoop the pudding into containers and refrigerate for at least 2-3 hours until chilled and thickened.
- Serve with optional toppings like coconut whipped cream, strawberries, bananas, or a drizzle of peanut butter.
