Ingredients

Base Ingredients

  • 1 scant cup raw cashews or cooked unsalted black beans
  • 3-4 Tbsp unsweetened almond milk or light coconut milk
  • ΒΌ cup unsweetened cocoa powder or cacao powder
  • 1-2 Tbsp maple syrup
  • 2 pitted Medjool dates
  • 1 pinch sea salt
  • 1 tsp pure vanilla extract (optional)
  • 1 Tbsp melted coconut oil (optional)

For Serving (optional)

  • as desired coconut whipped cream
  • as desired strawberries
  • as desired banana
  • as desired peanut butter

Instructions

  1. For the black bean pudding, rinse and drain the black beans, then blend with the other ingredients until smooth.
  2. For the cashew pudding, soak the cashews in boiling water for 1 hour, then rinse and drain before blending with the other ingredients until smooth.
  3. Taste the pudding and adjust sweetness if necessary by adding more maple syrup or dates.
  4. If using black beans, strain the mixture through a fine mesh strainer if you want a smoother texture.
  5. Scoop the pudding into containers and refrigerate for at least 2-3 hours until chilled and thickened.
  6. Serve with optional toppings like coconut whipped cream, strawberries, bananas, or a drizzle of peanut butter.
