Ingredients

The wings

  • 10 whole chicken wings

Tikka Marinade

  • 1 cup full fat coconut milk
  • 1 ½ tablespoons ground coriander
  • 2 teaspoons ground chili pepper
  • 1 ¼ teaspoons salt
  • ½ bunch cilantro, chopped
  • 3 cloves garlic, chopped
  • ¼ cup fresh lemon juice

Citrus Cilantro Sauce

  • ¼ cup fresh lemon juice
  • ¼ cup full fat coconut milk
  • ½ bunch cilantro
  • teaspoon salt (or more to taste)
  • 1-2 tablespoons erythritol (or your favorite sweetener)

Instructions

  1. Separate the chicken wings into wing and drumette pieces, discarding the tips.
  2. Combine the marinade ingredients in a zip-loc bag, add the wings, and marinate for 24-48 hours.
  3. Remove wings from the marinade and blot with paper towels. Season with salt and pepper.
  4. Preheat the grill, oil the grate, and grill the wings for about 10 minutes per side until cooked through.
  5. While the wings are grilling, blend the sauce ingredients in a blender and adjust seasoning to taste.
  6. Serve the grilled wings with the sauce poured over or on the side.
