Wasabi Lime Chicken Wings

Ingredients

  • 20 pieces chicken drummettes
  • 1 can coconut milk
  • 5 pieces limes
  • ¼ cup prepared wasabi
  • to taste sea salt
  • to taste fresh ground pepper

Instructions

  1. Combine coconut milk and wasabi, then juice 3 limes and grate the zest into the mixture, reserving about ½ cup for later.
  2. Add chicken wings to the marinade and let them marinate in the fridge for 30 minutes.
  3. Preheat the grill to medium/high (about 350 degrees) and oil the grill grates.
  4. Grill the wings for 7-10 minutes on each side, basting with the marinade as they cook.
  5. Slice the remaining lime and grill it for presentation.
  6. The wings are done when they reach an internal temperature of 170 degrees.
  7. Tent the wings for 5 minutes, then serve with grilled lime, additional zest, and a drizzle of sauce, finishing with sea salt and pepper.
