Chili Lime Chicken Wings

The marinade

jalapeno peppers (or 1 serrano pepper), ribs and seeds removed

Paleo-friendly fish sauce

The chicken

chicken wings and/or drumsticks

melted fat of choice

cut into wedges
Instructions
- Blend the onion, peppers, garlic, cilantro, ground pepper, lime zest and juice, fish sauce, and coconut aminos until smooth.
- Place the chicken wings in a bowl and add the marinade, mixing well with your hands.
- Marinate the chicken in the fridge for at least 30 minutes and up to 12 hours.
- Take the wings out of the refrigerator 30 minutes before cooking.
- Preheat the oven to 400°F (or 425°F for regular setting) if baking, or prepare the grill.
- For baking, line a baking sheet with foil, place a wire rack on top, and arrange the wings on the rack.
- Roast the wings for 30 minutes, flipping halfway through, until golden brown.
- For grilling, grease the cooking grate and cook the wings over medium heat for about 15 minutes, turning once.
- Serve the wings with lime wedges.
