Chili Lime Chicken Wings

Ingredients

The marinade

  • ½ medium onion, roughly chopped
  • 2 pieces jalapeno peppers (or 1 serrano pepper), ribs and seeds removed
  • 3 cloves garlic, peeled
  • ½ cup cilantro, tightly packed
  • to taste freshly ground pepper
  • Zest from 2 limes
  • ¼ cup lime juice
  • 2 tablespoons Paleo-friendly fish sauce
  • 2 tablespoons coconut aminos

The chicken

  • 6 pounds chicken wings and/or drumsticks
  • 1-2 tablespoons melted fat of choice
  • 4 limes cut into wedges

Instructions

  1. Blend the onion, peppers, garlic, cilantro, ground pepper, lime zest and juice, fish sauce, and coconut aminos until smooth.
  2. Place the chicken wings in a bowl and add the marinade, mixing well with your hands.
  3. Marinate the chicken in the fridge for at least 30 minutes and up to 12 hours.
  4. Take the wings out of the refrigerator 30 minutes before cooking.
  5. Preheat the oven to 400°F (or 425°F for regular setting) if baking, or prepare the grill.
  6. For baking, line a baking sheet with foil, place a wire rack on top, and arrange the wings on the rack.
  7. Roast the wings for 30 minutes, flipping halfway through, until golden brown.
  8. For grilling, grease the cooking grate and cook the wings over medium heat for about 15 minutes, turning once.
  9. Serve the wings with lime wedges.
