Caribbean Inspired West Indies Wings

Caribbean style hot sauce (habanero base)

fresh ground ginger
Instructions
- Combine the sauce ingredients, reserving ⅓ cup for basting and ⅓ cup for dipping.
- Marinate the wings in the remaining sauce for at least 30 minutes.
- Preheat the grill to medium-high heat (350°F) and prepare direct and indirect cooking zones.
- Oil the grill grates to prevent sticking.
- Grill the wings on indirect heat for 7-8 minutes per side.
- Finish on direct heat, basting with sauce until the internal temperature reaches 170°F.
- Tent the wings under foil for 10 minutes before serving with additional sauce.
