Ingredients

  • 2 lbs chicken wings
  • 1 tbsp baking powder
  • to taste BBQ rub
  • ½ cup mango habanero preserves
  • 2 tbsp rice wine vinegar
  • 2 tbsp honey
  • as needed avocado oil

Instructions

  1. Rinse and dry the chicken wings.
  2. Coat the wings with baking powder and BBQ rub.
  3. Preheat the grill to 400°F and add wood chunks once the charcoal is lit.
  4. Place the wings on the heat shield to protect them from direct flame.
  5. Grill the wings until they reach an internal temperature of 155°F.
  6. Move the wings to the direct heat side and grill until they reach 170°F.
  7. Tent the wings with foil to keep them warm.
  8. Prepare the glaze by simmering mango habanero preserves, rice wine vinegar, and honey until reduced by half.
  9. Drizzle the glaze over the wings and serve warm.
