Instructions
- Rinse and dry the chicken wings.
- Coat the wings with baking powder and BBQ rub.
- Preheat the grill to 400°F and add wood chunks once the charcoal is lit.
- Place the wings on the heat shield to protect them from direct flame.
- Grill the wings until they reach an internal temperature of 155°F.
- Move the wings to the direct heat side and grill until they reach 170°F.
- Tent the wings with foil to keep them warm.
- Prepare the glaze by simmering mango habanero preserves, rice wine vinegar, and honey until reduced by half.
- Drizzle the glaze over the wings and serve warm.
