Simple Spring Salad

Ingredients

The dressing

  • orange juice only
  • ½ lemon juice only
  • ½ small red onion, chopped
  • ¼ cup extra virgin olive oil
  • teaspoon fine grain salt

The salad

  • 4 big handfuls salad greens, washed and dried
  • ½ cup walnut halves, toasted
  • cup black olives, pitted

Instructions

  1. Whisk together the juice of 1½ oranges, lemon juice, most of the red onion, olive oil, and salt in a medium bowl until emulsified.
  2. Taste and adjust seasoning with more salt or lemon juice if needed.
  3. Peel the remaining orange and cut it into segments, removing any seeds.
  4. In a large bowl, place the salad greens and toss gently with a splash of the dressing.
  5. Add the orange segments and walnuts, and toss again, adjusting the dressing as needed.
  6. Serve the salad topped with the remaining red onion and olives.
