Simple Spring Salad

The salad

salad greens, washed and dried

walnut halves, toasted

Instructions
- Whisk together the juice of 1½ oranges, lemon juice, most of the red onion, olive oil, and salt in a medium bowl until emulsified.
- Taste and adjust seasoning with more salt or lemon juice if needed.
- Peel the remaining orange and cut it into segments, removing any seeds.
- In a large bowl, place the salad greens and toss gently with a splash of the dressing.
- Add the orange segments and walnuts, and toss again, adjusting the dressing as needed.
- Serve the salad topped with the remaining red onion and olives.
