Butter Lettuce Sunshine Salad

Ingredients

The salad

  • 6 to 8 handfuls mixed salad greens or butter lettuce
  • 1 or 2 medium oranges
  • 1 whole avocado
  • ½ cup toasted nuts
  • ½ cup sliced spring onions
  • cup Citrus Parmesan Dressing

Citrus Parmesan Dressing

  • cup freshly grated Parmesan cheese
  • 2 whole oranges (zest and juice)
  • 2 tablespoons chopped shallots
  • 2 tablespoons white wine vinegar
  • 1 cup extra-virgin olive oil
  • 2 pinches salt
  • 2 pinches pepper

Instructions

  1. Wash and dry the salad greens, then place them in a large bowl.
  2. Tear the oranges into pieces, removing the pith, and add them to the bowl.
  3. Add the toasted nuts and sliced spring onions to the bowl.
  4. Toss the salad ingredients with the Citrus Parmesan Dressing.
  5. Gently add the sliced avocado and give the salad a light toss to avoid mashing the avocado.
  6. Sprinkle with Parmesan shavings before serving.
