  • lbs ripe but firm peaches

Crumb Topping

  • cups old fashioned oats
  • ½ cup brown sugar
  • ¼ cup flour
  • 6 tablespoons cold butter
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg

Instructions

  1. 1. Preheat the oven to 350°F.
  2. 2. Combine the peaches and sugar in a large bowl and let them sit for 30 minutes, tossing occasionally.
  3. 3. Drain the peaches in a colander set over a bowl, reserving the juices.
  4. 4. In a small bowl, whisk together ¼ cup of the drained peach juice, cornstarch, lemon juice, salt, cinnamon, and nutmeg.
  5. 5. Toss the juice mixture with the peaches and transfer to a sprayed 8 or 9-inch square pan.
  6. 6. For the topping, combine oats, brown sugar, flour, cinnamon, and nutmeg, then mix in the cold butter until crumbly.
  7. 7. Sprinkle the topping evenly over the peach mixture.
  8. 8. Bake for about 30 minutes until the topping is golden brown and the peach mixture is bubbling.
  9. 9. Let cool to lukewarm before serving, ideally over vanilla ice cream.
