Instructions
- 1. Preheat the oven to 350°F.
- 2. Combine the peaches and sugar in a large bowl and let them sit for 30 minutes, tossing occasionally.
- 3. Drain the peaches in a colander set over a bowl, reserving the juices.
- 4. In a small bowl, whisk together ¼ cup of the drained peach juice, cornstarch, lemon juice, salt, cinnamon, and nutmeg.
- 5. Toss the juice mixture with the peaches and transfer to a sprayed 8 or 9-inch square pan.
- 6. For the topping, combine oats, brown sugar, flour, cinnamon, and nutmeg, then mix in the cold butter until crumbly.
- 7. Sprinkle the topping evenly over the peach mixture.
- 8. Bake for about 30 minutes until the topping is golden brown and the peach mixture is bubbling.
- 9. Let cool to lukewarm before serving, ideally over vanilla ice cream.
