Ingredients

The filling

  • 4 cups sliced fresh peaches
  • 1 each lemon (zested)
  • 1 teaspoon vanilla extract
  • ¼ teaspoon ground cinnamon
  • 2 tablespoons packed brown sugar
  • 1 tablespoon additional brown sugar (if peaches aren't ripe)

The topping

  • cup all-purpose flour
  • cup packed brown sugar
  • cup cold butter
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ¾ cup rolled oats

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, combine sliced peaches, lemon zest, vanilla extract, cinnamon, and brown sugar. Toss to coat and transfer to a baking dish.
  3. In another bowl, mix flour, brown sugar, cold butter, cinnamon, and salt using a pastry cutter until crumbly.
  4. Fold in the oats and sprinkle the topping over the peaches, pressing lightly.
  5. Bake for 30-35 minutes until the topping is lightly browned and crisp.
  6. Let cool for 5-10 minutes before serving warm, optionally with vanilla bean ice cream.
