Instructions
- Preheat the oven to 350°F.
- In a large bowl, combine sliced peaches, lemon zest, vanilla extract, cinnamon, and brown sugar. Toss to coat and transfer to a baking dish.
- In another bowl, mix flour, brown sugar, cold butter, cinnamon, and salt using a pastry cutter until crumbly.
- Fold in the oats and sprinkle the topping over the peaches, pressing lightly.
- Bake for 30-35 minutes until the topping is lightly browned and crisp.
- Let cool for 5-10 minutes before serving warm, optionally with vanilla bean ice cream.
