Ingredients

The chicken

  • 1 ¼ lbs chicken breast tenderloins
  • ¼ cup Italian salad dressing
  • 3 Tbsp balsamic vinegar
  • 1 ½ Tbsp honey
  • 1/8 tsp crushed red pepper flakes
  • 2 Tbsp olive oil
  • Salt to taste
  • Black pepper to taste

The vegetables

  • 1 lb fresh asparagus
  • 1 ½ cups matchstick carrots
  • 1 cup grape tomatoes

Instructions

  1. Whisk together the salad dressing, balsamic vinegar, honey, and red pepper flakes in a mixing bowl and set aside.
  2. Heat olive oil in a skillet over medium-high heat and season the chicken with salt and pepper.
  3. Cook the chicken for about 6-7 minutes, rotating once, until fully cooked.
  4. Add half of the dressing mixture to the skillet and coat the chicken.
  5. Remove the chicken and set aside, then add the asparagus and carrots to the skillet and cook until crisp-tender.
  6. Transfer the veggies to the plate with the chicken.
  7. Add the remaining dressing to the skillet and cook until thickened.
  8. Add the tomatoes to the chicken and veggies, and drizzle the dressing over everything.
