Ingredients

The chicken and glaze

  • 4 pieces bone-in, skin-on chicken thighs
  • cup honey
  • 2 tablespoons balsamic vinegar
  • 1 ½ teaspoons dried Italian seasoning
  • to taste salt and pepper

The vegetables

  • 1 pound small red potatoes, halved
  • 1 tablespoon olive oil
  • 1 pound asparagus stalks, trimmed
  • 2 tablespoons chopped parsley

Miscellaneous

  • to taste cooking spray

Instructions

  1. Preheat the oven to 425°F and line a sheet pan with foil, coating it with cooking spray.
  2. Arrange the chicken thighs on the pan and season with salt and pepper.
  3. In a small bowl, whisk together the honey, balsamic vinegar, and Italian seasoning.
  4. In a large bowl, combine the potatoes with olive oil, salt, and pepper, and toss to coat.
  5. Place the potatoes around the chicken and brush half of the balsamic mixture over the chicken.
  6. Bake for 20 minutes, then brush the remaining glaze over the chicken and add the asparagus to the pan, seasoning the asparagus with salt and pepper.
  7. Bake for an additional 10-15 minutes until the chicken is done and the potatoes and asparagus are tender.
  8. Sprinkle with parsley before serving.
