Cavatelli and Broccoli

Ingredients

The pasta and vegetables

  • 8 ounces cavatelli pasta
  • 12 ounces broccoli

The sauce

  • 4 cloves garlic
  • 1 cup veggie broth
  • ¼ cup white wine
  • ½ teaspoon lemon juice
  • ½ teaspoon sea salt
  • 3 tablespoons brown rice flour
  • 1-2 teaspoons red pepper flakes

Optional ingredients

  • 2 links vegan sausage
  • ½ cup vegan Parmesan cheese

Instructions

  1. Cook the pasta according to package directions, stopping 2 minutes early.
  2. Add the broccoli and bring to a boil, checking for doneness.
  3. Drain the pasta and broccoli in a strainer.
  4. In the same pot, sauté the garlic with oil or broth until fragrant.
  5. Whisk in the broth, wine, lemon juice, salt, and flour, allowing to thicken.
  6. Add the pasta and broccoli back into the pot and mix well.
  7. Incorporate the vegan sausage and Parmesan if using, and serve.
