Leftover Prime Rib Sandwich

leftover prime rib, thinly sliced

sweet onion, sliced

mushrooms, sliced

arugula

french bread or hoagie rolls

au jus

creamy horseradish sauce
Optional additions

provolone or swiss cheese
Instructions
- Prepare the horseradish sauce and refrigerate until needed.
- Melt butter in a skillet and sauté onions and mushrooms until browned.
- Cook onions and mushrooms for 3-5 minutes without stirring, then reduce heat and stir for another 5-7 minutes.
- Trim the leftover prime rib, removing bone and excess fat, and slice thinly.
- Slice the baguette in half lengthwise.
- Spread horseradish sauce on the bottom half of the bread.
- Add arugula, then layer with thinly sliced prime rib.
- Top with caramelized onions and mushrooms, and optionally add cheese.
- Cover with the top half of the baguette and cut into sandwiches.
- Serve with au jus and extra horseradish sauce.
