Portabella Mushroom Sandwich

Ingredients

  • 2 whole whole grain rolls
  • 1 clove garlic
  • 1 tablespoon extra virgin olive oil
  • ¼ cup balsamic vinegar
  • 2 teaspoons oregano
  • 1 teaspoon garlic powder
  • to taste salt
  • to taste pepper
  • 2 caps portabella mushroom
  • ½ cup jarred roasted red peppers
  • 2 oz goat cheese
  • ½ medium red onion
  • a couple of handfuls arugula

Instructions

  1. Mix olive oil, balsamic vinegar, oregano, garlic powder, salt, and pepper in a bowl.
  2. Coat mushrooms and onions with the mixture and let them sit for about 15 minutes.
  3. Heat a grill pan over medium-high heat and grill the mushrooms and onions for about 5 minutes on each side until tender.
  4. Toast the rolls and rub each with a garlic clove for flavor.
  5. Layer arugula, grilled onions, mushrooms, roasted peppers, and more arugula on the bottom half of the roll.
  6. Spread goat cheese on the top half of the roll, assemble the sandwich, and enjoy.
