Portabella Mushroom Sandwich

Instructions
- Mix olive oil, balsamic vinegar, oregano, garlic powder, salt, and pepper in a bowl.
- Coat mushrooms and onions with the mixture and let them sit for about 15 minutes.
- Heat a grill pan over medium-high heat and grill the mushrooms and onions for about 5 minutes on each side until tender.
- Toast the rolls and rub each with a garlic clove for flavor.
- Layer arugula, grilled onions, mushrooms, roasted peppers, and more arugula on the bottom half of the roll.
- Spread goat cheese on the top half of the roll, assemble the sandwich, and enjoy.
