Flank Steak

Ingredients

The steak

  • 2 lbs. flank steak, cut into four 8 oz. pieces

The marinade

  • 1 tablespoon ponzu
  • 2 tablespoons mirin
  • 3 tablespoons white miso
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons Japanese cooking sake
  • 2 teaspoons sugar
  • teaspoon cayenne pepper
  • 3 dashes black pepper

The salad

  • 1 package fresh herb salad
  • 3 tablespoons ponzu

Instructions

  1. Mix the marinade ingredients in a saucepan, bring to a boil, and then let it cool.
  2. Marinate the steak in a plastic bag with half of the glaze for 1 hour.
  3. Preheat the grill and scrape off excess marinade before grilling.
  4. Grill each side of the steak for about 3-4 minutes, adjusting for desired doneness.
  5. Brush some glaze on the steak and let it set on the grill for an additional minute on each side.
  6. Remove the steak from the grill and let it rest for 10 minutes.
  7. Toss the fresh herb salad with ponzu dressing.
  8. Serve the steak on a plate with glaze and salad.
