Chocolate Olive Oil Cake

Ingredients

The cake

  • ¾ cup olive oil
  • 1 cup white sugar
  • 3 large eggs
  • 2 tsp vanilla
  • 1 ¼ cups all-purpose flour
  • ½ cup cocoa powder
  • 2 tbsp cocoa powder
  • ½ tsp sea salt
  • ½ tsp baking soda
  • ½ cup boiling water

The icing

  • 250 g full fat cream cheese
  • 225 g Greek chocolate
  • 1 ½ cups icing sugar

For the topping

  • 2 cups fresh strawberries
  • 2 tbsp sugar
  • to taste fresh basil

Instructions

  1. Preheat the oven to 350°F and prepare a 9x9 cake tin.
  2. In a mixing bowl, whisk together the eggs, sugar, vanilla, and olive oil for 2-3 minutes.
  3. In another bowl, sift together the flour, cocoa powder, salt, and baking soda.
  4. Combine the wet and dry ingredients, then stir in the boiling water.
  5. Pour the batter into the prepared tin and bake for 30-32 minutes.
  6. Let the cake cool for 5 minutes, then transfer to a cooling rack.
  7. Prepare the cream cheese icing by melting the chocolate and mixing it with cream cheese and icing sugar.
  8. Frost the cooled cake with the icing and top with strawberries and basil.
