Ingredients

The chicken

  • 1.5 lbs chicken breast, cut into cubes
  • 1 tbsp ghee (or coconut oil for dairy free)

The seasoning

  • 1 tsp sea salt
  • 1 tsp ginger
  • 1 tsp garlic powder
  • 1 tsp garam masala
  • ½ tsp turmeric
  • ½ tsp cumin

The rest

  • 1 onion, diced
  • 1 poblano pepper, diced (or sub bell pepper)
  • 1 head cauliflower, riced (about 6 cups)
  • ½ tsp sea salt
  • ½ tsp pepper
  • 1 tbsp lemon juice (about ½ lemon)
  • ¼ cup chopped cilantro (for serving)

Instructions

  1. Combine all seasoning ingredients in a small bowl and mix well.
  2. Cut chicken into cubes and toss with the seasoning.
  3. Rice the cauliflower and chop the onion, pepper, and cilantro.
  4. Heat a large skillet over medium heat and add ghee.
  5. Add chicken pieces, onion, and poblano pepper to the skillet and cook until the chicken is fully cooked, about 8-10 minutes.
  6. Add cauliflower rice, lemon juice, salt, and pepper to the pan and mix everything together.
  7. Cook until the cauliflower rice starts to soften, about 3-4 minutes.
  8. Remove from heat and serve topped with chopped cilantro.
