cauliflower, riced (about 6 cups)

Instructions
- Combine all seasoning ingredients in a small bowl and mix well.
- Cut chicken into cubes and toss with the seasoning.
- Rice the cauliflower and chop the onion, pepper, and cilantro.
- Heat a large skillet over medium heat and add ghee.
- Add chicken pieces, onion, and poblano pepper to the skillet and cook until the chicken is fully cooked, about 8-10 minutes.
- Add cauliflower rice, lemon juice, salt, and pepper to the pan and mix everything together.
- Cook until the cauliflower rice starts to soften, about 3-4 minutes.
- Remove from heat and serve topped with chopped cilantro.
