Roasted Cauliflower Steaks with Pesto and Mozzarella

Instructions
- Preheat the oven to 425°F and place a metal cookie sheet inside.
- Remove leaves from the cauliflower and cut off the stem.
- Slice the cauliflower vertically into ¾-inch thick slices, saving any crumbled florets for another use.
- Brush each cauliflower steak with olive oil and sprinkle with salt and pepper.
- Carefully remove the hot baking sheet from the oven and place the cauliflower oil-side-down on it.
- Lightly brush the remaining sides with oil and sprinkle with salt and pepper before returning the pan to the oven.
- Roast for about 12 minutes, then carefully flip the steaks and roast for an additional 7-8 minutes until browned and tender.
- Spread pesto on each steak and sprinkle with mozzarella cheese, then return to the oven until the cheese melts, about a minute.
- Serve with lemon wedges for squeezing before eating.
