Roasted Cauliflower Steaks with Pesto and Mozzarella

Ingredients

The cauliflower

  • 1 head cauliflower

The seasoning and toppings

  • 2 tablespoons extra virgin olive oil
  • to taste kosher salt
  • to taste black pepper
  • 6 tablespoons pesto
  • ½ cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 425°F and place a metal cookie sheet inside.
  2. Remove leaves from the cauliflower and cut off the stem.
  3. Slice the cauliflower vertically into ¾-inch thick slices, saving any crumbled florets for another use.
  4. Brush each cauliflower steak with olive oil and sprinkle with salt and pepper.
  5. Carefully remove the hot baking sheet from the oven and place the cauliflower oil-side-down on it.
  6. Lightly brush the remaining sides with oil and sprinkle with salt and pepper before returning the pan to the oven.
  7. Roast for about 12 minutes, then carefully flip the steaks and roast for an additional 7-8 minutes until browned and tender.
  8. Spread pesto on each steak and sprinkle with mozzarella cheese, then return to the oven until the cheese melts, about a minute.
  9. Serve with lemon wedges for squeezing before eating.
