Maple Chai Chex Mix

The Syrup

Instructions
- Preheat the oven to 320ºF and line a baking sheet with parchment paper.
- In a large bowl, combine rice chex, cheerios, 1 cup coconut flakes, almonds, and pretzel sticks.
- In a saucepan over medium heat, melt the butter, then add brown sugar, ¾ cup maple syrup, and 1 tablespoon chai spices, whisking until boiling.
- Remove from heat and pour the syrup over the chex mixture, mixing to coat.
- Spread the mixture on the prepared baking sheet and sprinkle with ½ teaspoon kosher salt.
- Bake for 15 minutes, then remove and toss the mixture.
- Drizzle with the remaining ¼ cup maple syrup and bake for an additional 15 minutes.
- After baking, sprinkle with the remaining ½ teaspoon kosher salt, let cool for 10 minutes, then add yogurt covered pretzels and remaining coconut flakes.
- Fold gently to combine while keeping chunks intact, and let cool completely before storing.
