Ingredients

The main ingredients

  • 4-6 oz beef tenderloin, cut into bite-sized pieces
  • 1 lb fresh flat rice noodles
  • 2 tablespoons oil
  • 2 cloves garlic, minced
  • 1 cup fresh bean sprouts, ends trimmed
  • 1 oz green onion (scallion) or yellow chives, cut into 2 inches lengths

The marinade

  • 2 teaspoons soy sauce
  • ½ teaspoon dark soy sauce
  • ½ teaspoon Chinese rice wine or sherry
  • 1 heaping teaspoon cornstarch

The seasonings

  • tablespoons soy sauce
  • 1 teaspoon dark soy sauce
  • 1 tablespoon oyster sauce
  • ½ teaspoon fish sauce
  • ½ teaspoon sugar

Instructions

  1. Marinate the beef with soy sauce, dark soy sauce, Chinese rice wine, and cornstarch for 15 minutes.
  2. Loosen the flat rice noodles to prevent clumping.
  3. Mix all seasoning ingredients in a small bowl and set aside.
  4. Heat oil in a wok over high heat, add garlic, and stir-fry until light brown.
  5. Add marinated beef and stir-fry until half-cooked.
  6. Add bean sprouts, flat rice noodles, and seasoning mixture, and stir-fry until well combined.
  7. Continue cooking until noodles are slightly charred, then add green onion and stir-fry for another 10 seconds.
  8. Transfer to a serving platter and serve immediately.
