Ingredients

The base

  • 1 15oz can black beans
  • ½ cup cilantro
  • cups salsa
  • ¼ tsp cumin
  • ¼ tsp chili powder
  • tsp garlic powder
  • tsp onion powder
  • tsp salt
  • tsp paprika

The layers

  • 1 cup plain Greek yogurt
  • 2 ripe avocados
  • 1 lime lime
  • ¼ tsp salt
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • ½ cup shredded cheese
  • ¼ cup diced green onion

Instructions

  1. Drain and rinse the black beans, then mash them in a bowl until they lose their shape.
  2. Mix in ¼ cup cilantro, ¼ cup salsa, and the taco seasoning, then layer this mixture at the bottom of a dish.
  3. Add a layer of Greek yogurt on top of the beans.
  4. Pour the remaining salsa over the yogurt layer.
  5. For the guacamole, mash the avocados and mix in the juice of one lime, the remaining cilantro, and ¼ tsp salt, then layer it on top of the salsa.
  6. Top with shredded lettuce, diced tomatoes, shredded cheese, and diced green onion.
  7. Refrigerate or serve immediately. The dip stays good for 24 hours.
