Ingredients

  • 2 cups fresh dill (stems included)
  • ½ cup raw cashews
  • 2 cloves garlic
  • 1 medium shallot (or about ¼ cup red onion)
  • ¼ teaspoon ground cumin
  • 1 Tablespoon Dijon mustard
  • ½ fresh lemon (juiced)
  • ¼ cup olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  1. Combine dill, cashews, garlic, shallot, cumin, mustard, and lemon juice in a food processor and pulse until mixed.
  2. Scrape down the sides as needed.
  3. Add olive oil and season with salt and pepper, then blend until smooth.
