Ingredients

The main mixture

  • 1 cup creamy peanut butter
  • 2 ½ tsp vanilla extract
  • 2 tbsp unsweetened cocoa powder
  • 2 tbsp salted Vital Farms butter, melted
  • ¼ tsp salt (if using unsalted butter)
  • 2 cups unsweetened shredded coconut

Optional toppings

  • to taste crumbled keto friendly chocolate
  • a few drops stevia or 1 tbsp maple syrup (for sweetness)

Instructions

  1. Line a baking sheet with parchment paper or a silpat.
  2. In a medium mixing bowl, combine all the ingredients and mix well.
  3. Use a cookie scoop to form balls and place them on the baking sheet.
  4. Sprinkle chopped chocolate on top and freeze for 30 minutes.
