Ingredients

The base

  • 1 cup Natural peanut butter (salted, the kind that's a little runny)
  • 6 tbsp Unsalted butter (melted)
  • 1 tsp Vanilla extract
  • ½ tsp Sea salt (to taste)
  • cup Besti Powdered Monk Fruit Allulose Blend
  • cup Peanut flour (no sugar added)

The chocolate coating

  • 6 oz Sugar-Free dark chocolate chips

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a large bowl, combine the peanut butter, melted butter, vanilla, and sea salt. Beat until smooth.
  3. Beat in the sweetener and peanut flour until smooth. Adjust salt to taste.
  4. If the mixture is too sticky, refrigerate for 20 minutes to firm up.
  5. Use a small cookie scoop to shape the mixture into balls and place them on the lined baking sheet. Refrigerate until firm.
  6. Melt the chocolate chips in a double boiler or microwave until smooth.
  7. Insert a toothpick into each peanut butter ball and dip into the melted chocolate, leaving a small area of peanut butter showing.
  8. Place the balls back on the baking sheet, remove toothpicks, and smooth over any holes with your fingers.
  9. Refrigerate for about 30 minutes or until the chocolate is firm.
