One Pan Cabbage and Potato Skillet

Instructions
- Heat a large pan with 2 tablespoons of olive oil.
- Add the diced onion and fry for one minute.
- Add the chopped potatoes and cook over medium heat, covered, for 10 minutes, stirring occasionally.
- Stir in the minced garlic and sliced chicken sausage, allowing them to brown for 5 minutes while stirring constantly.
- Add the chopped cabbage, red wine vinegar, and an additional tablespoon of olive oil, then stir.
- Cover the pan and stir every 2 minutes for about 10 minutes until the cabbage starts to soften.
- Add paprika, salt, and pepper, then stir to combine.
- Turn off the heat and serve immediately, optionally topping with sliced jalapeno.
