One Pan Cabbage and Potato Skillet

Ingredients

  • 2 tbsp olive oil
  • ½ cup diced white onion
  • 2 tsp minced garlic
  • 1 lb baby Yukon potatoes, chopped into ½ inch size
  • 3 links chicken sausage, sliced (about 9 oz.)
  • 1 small head green cabbage, chopped
  • 2 tbsp red wine vinegar
  • 1 tbsp olive oil
  • 2 tsp paprika
  • 1 tsp salt
  • ½ tsp pepper
  • 1 jalapeno sliced for topping (optional)

Instructions

  1. Heat a large pan with 2 tablespoons of olive oil.
  2. Add the diced onion and fry for one minute.
  3. Add the chopped potatoes and cook over medium heat, covered, for 10 minutes, stirring occasionally.
  4. Stir in the minced garlic and sliced chicken sausage, allowing them to brown for 5 minutes while stirring constantly.
  5. Add the chopped cabbage, red wine vinegar, and an additional tablespoon of olive oil, then stir.
  6. Cover the pan and stir every 2 minutes for about 10 minutes until the cabbage starts to soften.
  7. Add paprika, salt, and pepper, then stir to combine.
  8. Turn off the heat and serve immediately, optionally topping with sliced jalapeno.
