Sheet Pan Kielbasa Cabbage and Potatoes

Ingredients

  • 1 piece uncured kielbasa (14-16 ounces)
  • 1 lb fingerling potatoes
  • 1 small purple cabbage (~2 lbs.)
  • 1 small yellow onion
  • 4 cloves garlic
  • 1 ½ Tbsp oil or cooking fat
  • to taste salt
  • to taste black pepper
  • several sprigs fresh thyme or ¾ tsp. dried thyme
  • to serve spicy brown or Dijon mustard (optional)

Instructions

  1. Preheat the oven to 400℉ and line a baking sheet with parchment paper or a silicone mat.
  2. Place the potatoes, onion, garlic, and cabbage on the baking sheet, drizzling with oil and tossing gently.
  3. Turn the potatoes cut-side down and arrange the kielbasa over the potatoes and onions, seasoning with salt, pepper, and thyme.
  4. Bake in the preheated oven for 45-55 minutes, rotating the pan halfway through, until the potatoes are tender and golden brown.
  5. Remove from the oven and serve with mustard if desired.
