Mustardy Grilled Cabbage and Kielbasa

Ingredients

The potatoes

  • 1 lb small red potatoes
  • 1 tsp Diamond Crystal kosher salt
  • ½ tsp Morton kosher salt
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • 3 Tbsp extra-virgin olive oil

The cabbage and kielbasa

  • 1 small head savoy cabbage
  • 12 oz kielbasa

The dressing

  • 1 Tbsp mayonnaise
  • 1 Tbsp Dijon mustard
  • 3 Tbsp whole grain mustard
  • 3 Tbsp apple cider vinegar
  • 1 tsp extra-virgin olive oil

For grilling

  • to taste vegetable oil
  • to taste freshly ground pepper
  • to taste torn dill

Instructions

  1. Prepare the grill for medium-high heat and oil the grate.
  2. In a bowl, combine the potatoes with salt, garlic powder, smoked paprika, and olive oil, then toss and transfer to a foil packet.
  3. Cook the potatoes on the grill for 25-28 minutes until tender.
  4. Mix mayonnaise, Dijon mustard, whole grain mustard, and olive oil in a bowl, then rub the mixture over the cabbage wedges.
  5. Grill the cabbage until tender and charred, about 7-9 minutes, then transfer to a platter.
  6. Grill the kielbasa until charred, about 10 minutes, and add to the platter.
  7. Whisk together apple cider vinegar, remaining mustard, and olive oil for the dressing.
  8. Arrange the potatoes on top of the kielbasa and cabbage, drizzle with dressing, and sprinkle with dill and pepper.
